CORN BREAD

makes 18 pieces

 

ingredients;

  • 1cup fresh or frozen corn
  • 3 cups corn meal
  • 3 cups flour
  • 1.5 cups sugar
  • 1.5 tsp. salt
  • 3 ¾  tbsp. baking powder
  • 3 eggs
  • ¾  c. Tenderflake
  • 950 ml milk

 

method;

1.Combine and mix dry ingredients.

2.Beat eggs with whisk and add shortening  and milk.

3.Add wet ingredients to dry and fold.

4.Half fill a large baking tray.

5.Bake at 375˚F for 40 minutes, and 300˚F for 20 minutes.

6.Serve with butter or a bed of 1 tbsp. honey.

  2. These are more like a sweet corn muffin and nothing at ALL like real southern cornbread. A cup and a half of sugar? No self respecting southern cook would add in that much sugar to cornbread. Also, the best cornbread is made with buttermilk or sour milk. No substitutes. It MUST be cooked in a cast iron skillet too, to create the perfect crisp outside and tender inside. Sweet corn muffins are not “corn bread” though. I DO wish someone here would open a REAL southern/soul food restaurant. Please call this recipe something else cuz honey it ain’t cornbread made this way. This version is a for the masses, sweetened up substitute which is very much like a cake or muffin but and it might taste good but, it’s just not cornbread.
