Ingredients
- 3-4 side pork ribs (Split)
- Smokin’ Maple Bourbon Chipotle BBQ Sauce
Honey Soya Rosemary marinade Ingredients
- ¼ cup soya sauce
- ¾ cup hot sauce
- ¼ cup Worchester sauce
- 1 ¼ tsp. black pepper
- ¾ tsp. cayenne pepper
- 2 tsp. chili flakes
- 4 tsp. dried rosemary
- ¾ cup honey
- 2 tsp. dried tarragon
Method:
- Marinate ribs in the honey Soya marinade 2-3 hours or overnight.
- Bake in the oven at 350F for 1.5 hours in marinade.
- Remove from oven.
- Put Smokin’ Maple Bourbon Chipotle BBQ sauce on the ribs then cook in the oven until meat is tender.
- Finish off on the grill for 5 minutes if desired.

Ingredients:
- 6 boneless chicken breasts
- 3 oz blackening mix
- 3 tbsp. butter, melted
Method Blackened Chicken
- Place blackening mix in a plastic bag and toss the chicken in the spices until thoroughly coated. Set aside.
- Set gas grill at high heat.
- Put chicken on grill and drizzle with melted butter. Allow flame to subside.
- Flip and do the same to the other side – this will blacken the meat. If it is not cooked through, finish in the oven or the side of the barbeque where the heat is low.
- Serve with lemon Beurre
Lemon Beurre Ingredients
- ½ cup white sugar
- ½ cup fresh lemon juice
- ¼ lb butter
- 2 cups whipping cream
Method, Lemon Beurre
- In a heavy saucepan, combine ½ cup white sugar and ½ cup fresh lemon juice. Bring to a boil, then immediately reduce to simmer. Cook until sauce is reduced by half and is thick enough to coat a spoon.
- While still simmering, drop in ¼ pound butter cut into 4 pieces, one piece at a time, stirring constantly.
- Once the butter has melted, remove from heat and stir in 2 cups whipping cream and cool for 1 hour.
- Sauce can be refrigerated for up to one week
