Ingredients

  • 3-4 side pork ribs (Split)
  • Smokin’ Maple Bourbon Chipotle BBQ Sauce

Honey Soya Rosemary marinade Ingredients

  • ¼ cup soya sauce
  • ¾ cup hot sauce
  • ¼ cup Worchester sauce
  • 1 ¼ tsp. black pepper
  • ¾ tsp. cayenne pepper
  • 2 tsp. chili flakes
  • 4 tsp. dried rosemary
  • ¾ cup honey
  • 2 tsp. dried tarragon

Method:

  1. Marinate ribs in the honey Soya marinade 2-3 hours or overnight.
  2. Bake in the oven at 350F for 1.5 hours in marinade.
  3. Remove from oven.
  4. Put Smokin’ Maple Bourbon Chipotle BBQ sauce on the ribs then cook in the oven until meat is tender.
  5. Finish off on the grill for 5 minutes if desired.

Ingredients:

  • 6 boneless chicken breasts
  • 3 oz blackening mix
  • 3 tbsp. butter, melted

Method Blackened Chicken

  1. Place blackening mix in a plastic bag and toss the chicken in the spices until thoroughly coated. Set aside.
  2. Set gas grill at high heat.
  3. Put chicken on grill and drizzle with melted butter.  Allow flame to subside.
  4. Flip and do the same to the other side – this will blacken the meat.  If it is not  cooked through, finish in the oven or the side of the barbeque where the heat is low.
  5. Serve with lemon Beurre

Lemon Beurre Ingredients

  • ½ cup white sugar
  • ½ cup fresh lemon juice
  • ¼ lb butter
  • 2 cups whipping cream

Method, Lemon Beurre

  1. In a heavy saucepan, combine ½ cup white sugar and ½ cup fresh lemon juice.  Bring to a boil, then immediately reduce to simmer.  Cook until sauce is reduced by half and is thick enough to coat a spoon.
  2. While still simmering, drop in ¼ pound butter cut into 4 pieces, one piece at a time, stirring constantly.
  3. Once the butter has melted, remove from heat and stir in 2 cups whipping cream and cool for 1 hour.
  4. Sauce can be refrigerated for up to one week
